Vineyard

On Howell Mountain, not far from Rancho del Oso, this vineyard is meticulously farmed by longtime grower Dino Dina. The rocky, restrictive soils produce a structured mountain Cabernet Sauvignon with a rich core of sweet black cherries and a touch of minerality and licorice.

Winemaking

The richness of this wine starts in the vineyard, where Adam and Ed are adamant about only picking the fruit when the tannins have reached optimal ripeness. After crushing, the juice was fermented and then aged for two years in some of Ed’s favorite thin-staved Chateau barrels from the Nevers forest. A small amount of Cabernet Franc was blended in to extend the finish and add layers of complexity.

Winemaker Comments

“This wine is both powerful and lush, owing to the fruit’s inherently ripe tannins. Generous black fruit flavors, brown spices and hints of tobacco are balanced by good acidity and a long, supple finish. I’ve been working with Howell Mountain fruit for over three decades, and its complex flavors are extraordinary at every vintage. The 2006 Cimarossa Cabernet Sauvignon showcases this unique appellation and its elegantly robust flavors just perfectly.” – Ed Sbragia
