Watermelon Gazpacho Recipe for your 4th of July party.
As the summer heat is upon us in the Dry Creek Valley, we are looking to this simple Gazpacho recipe for the perfect balance of sweet and savory. A refreshing appetizer for the July heat! It takes about 45 minutes to prepare and is a great vegetarian side option everyone will love. An Independence day done right!
Ingredients
1/2 Seedless Watermelon
3 Heirloom Tomatoes
1 Small Bunch of Basil
Olive Oil
Feta
Salt to Taste
Method

Blend together the Watermelon and Heirloom Tomatoes. Then strain.

Chop Basil and add to the mixture. Let it chill in the fridge for 30 minutes.

Add Watermelon and Tomato pieces for texture. Crumble Feta Cheese over the top of the Gazpacho.

Finish by drizzling Olive Oil and add Salt as desired. Enjoy immediately.
